What I Ate Wednesday 9.2

Happy September foodie friends!

{ breakfast } Just about every morning this week I’ve made these mini parfaits with layers of muesli, yogurt, honey, and strawberries. ( jar is from target on clearance for $1.12 )


A few weeks ago I made a batch of Spice Apple Bran Muffins from Bob’s Red Mill and put them in the freezer (so I wouldn’t eat them all) they are perfect for busy mornings + eating breakfast on the go.


{ lunch } I tried out A Couple Cooks recipe for Quinoa Stuffed Grilled Zucchini and it was delicious!  It’s { tried + true } and I highly recommend it.

Quinoa Stuffed Zucchini { dinner } Ever open your pantry and realize you’re missing one major ingredient from your recipe?  That happened to me when I was getting ready to make this baked salmon!  I didn’t have panko crumbs but I improvised by using crushed Ritz crackers and it turned out really good!

  1. Love the adaptation of ritz crackers instead of panko! Another option in the future for you would be use crushed nuts – I love a good pistachio-crusted fish.

    Those meals all look amazing. I adore salmon, but I totally hate that feeling of not having something and it seems to happen all the time to me so well done for your improv! I love the looked of the zucchinis, well done!
