Cacao Protein Bars

A few years ago I stumbled across one of the best protein bar recipes EVER!  I have made these no bake almond fudge protein bars 10..maybe 15 times! I know the recipe by heart but the other night when I started making a batch I panicked when I realized I didn’t the right ingredients.  How could I make protein bars without any protein?  I kept opening the same cabinet over and over again..you know..hoping the ingredients would magically appear.

Combine Oat flour quick oats and cacao protein blend

That trick really does work because Philosophie saved the day!  I used the Cacao Magic protein blend and it made these babies dark and delicious.

Ingredients

1 cup oat flour
1/2 cup quick oats
1/3 cup cacao protein powder (I used this one)
1/2 cup crispy rice cereal
1/2 cup peanut butter
1/3 cup honey
Optional — 1-2 Tablespoons of melted chocolate chips

Directions

Line a 9 x 9 baking pan with parchment paper.
In a large bowl mix all of the dry ingredients together and set aside.
In a small sauce pan melt the peanut butter and honey on medium heat.
Once melted remove the mixture from heat and combine with dry ingredients.  MIX WELL.
Using a spatula firmly press the mixture into the baking pan to form one even layer.  Refrigerate until the bars are cool and firm enough to cut into small bars.

Optional

In a small microwave safe bowl melt chocolate chips in the microwave for 30-45 seconds at a time.  Dip the tip of a knife into the melted chocolate and lightly drizzle the protein bars.

  3. Bookmarking these! I love making my own protein bars, because they are so much simpler and cheaper than ones you buy. The ones you buy are more of a treat.
