Last weekend I went to a cookout and made this delicious Mediterranean quinoa to bring along. All you have to do is chop..Whisk..Combine, chill and serve..
- 2 cups cooked quinoa (white or rainbow), completely chilled
- ¾ cup diced cucumber
- ¾ cup chopped tomatoes
- ¾ cup chopped red onion
- ⅓ cup crumbled feta cheese (optional)
FOR THE DRESSING
- Juice of 1 lemon
- 3 Tbsp. olive oil
- ½ tsp. garlic salt
- ½ tsp. oregano
- salt and pepper to taste
In a medium bowl, combine the quinoa, cucumber, tomatoes, onions with the dressing. Mix well. Season with salt and pepper to taste. Let the salad chill for at least 30 minutes before serving.
Enjoy as is, or use as a filling for lettuce wraps, or as a side with grilled chicken, shrimp, steak or tempeh.
